Her Lovely Banana Bread
My never ending search for sweet treats, that won't add a not-so-sweet surprise to my waist line, continues. I, like most fabulous women, am obsessed with cake in any way, shape, or form! If I'm being totally honest, I usually wake up every morning and crave a doughnut or a muffin, and this beautiful morning is no different. But here's the catch that my skinny jeans will be pleasantly surprised with! 
A Lovely (skinny) banana muffin recipe.
What you'll need:
1-1/4C. Whole Wheat Flour
3/4c. Rolled Oats
1-1/4tsp. Baking Powder
1/2tbsp. Baking Soda
1/8tsp. Salt
1tsp. Cinnamon 
1tsp. Nutmeg
1tsp. Vanilla Extract
3 Ripe Bananas (4in. Long)
2 Egg Whites
1/4c. Vanilla Greek Yogurt
2/3c. "Sohgave" Maple flavored agave syrup 
1/2c. Dried Coconut flakes for topping (optional)

What to do:
1. Preheat your over to 350F. Grease your pan, I used a medium loaf pan, these work great in a muffin trey as well.
2. In a medium mixing bowl, whisk together all dry ingredients and set aside.
3. Using an electric mixer or your kitchen aid, blend bamanas and vanilla until smooth. Add yogurt and syrup, blend until combined. Add egg whites one by one and just mix on low for 20 seconds. 
4. Set mixer to low-medium speed and slowly add dry mixture to the mixing bowl. Contiune to mix only until all ingredients are combined. 
5. Pour batter into pan (top with coconut flakes or garnish) and bake on the middle shelf for 40minutes. Using your very scientific toothpick testing tool, check if you muffins are cooked all the way through. 
6. Serve & enjoy!
